Baked Oatmeal

One of my family's faves! Years ago, sweet Chef Paula at the 4UR Ranch created this masterpiece to feed the seasonal summertime staff. Over the years, I've experimented with different additions & come up with the following amazing dessert-for-breakfast type dish.

Easily adaptable to suit anyone's tastebuds & dietary needs. Enjoy!


BAKED OATMEAL w/Berries

Serves 8-10

40 minutes total


INGREDIENTS

Mix:

  • 2/3 c. melted coconut oil

  • 3/4 c. sweetener (honey, coconut sugar, maple syrup or your preferred sweetener)

  • 4 c. oats (use gluten-free if necessary)

  • 3 tsp. baking powder

  • 1 tsp. sea salt

  • 1 tsp. cinnamon, nutmeg or cardamom

  • Optional additions: toasted coconut flakes, sprinkle of chia seeds, ground flax, chopped nuts, etc.

Then add:

  • 2 eggs, beaten

  • 1 tsp. of vanilla, maple or almond extract

  • 1.5 c. milk (I use almond or coconut)

  • 2 c. berries (We oftentimes use the frozen mixed berry blend from Costco.)

Bake:

Use a greased 9x13" pan

350 degrees for 30 minutes

Serve with a dollop of yogurt, sprinkle of fresh berries or whipped cream


*Can be made the night before and baked in the morning. Awesome Christmas morning breakfast option and wonderful to serve guests!
